This is one of my mix and match staples. This little cookie method right here is so versatile, easy and delicious that I continue to mix and match it over and over again. This time…I made lemon cookies with frosting. They’re the perfect addition to my little cookie family.
Shopping List
1 box of lemon cake mix
1 egg
1/4 cup lemon juice (use the juice from real lemons)
Lemon frosting
Preheat oven to 350 degrees
Line baking sheet with parchment paper.
Combine first 3 ingredients in a bowl with electric mixer. Spoon 2 tablespoons of dough onto parchment for each cookie.
Bake 12 minutes.
They’re cake cookies, so don’t expect a “finished” looking cookie. They’re done though after 12 minutes.
After cookies finish cooling on a cooling rack, frost each with your lemon frosting.
That’s it! Simple and delicious. The perfect little cookie recipe.

oh.my.word. i'm pretty much to the point in my Paleo diet journey that not much tempts me but this??! i LOVE me some citrus sweets and these look amazing! i may have to find an excuse to make these for someone else so i can cheat and have one!! =)

I make a similar cookie but I add a tub of coolwhip to the egg and cake mix, then roll them around in powdered sugar. We call them lemon whipersnaps!! So yummy!!

Probably one lemon…but I would buy two just to be on the safe side. Microwave your lemon for 30 seconds to get them extra juicy.

Considering lemon desserts are my absolute favorite (I could live on limoncello cake…if it didn't make me look like I lived on it) and this is incredibly simple, I must try it! Love the tip on getting more juice out of lemons too.
