I love shrimp. It’s so versatile, easy to work with, simple and quick cooking. All things I am looking for when making supper for my family. This pasta came together in minutes. I made ours spicy…but you can absolutely tame it a bit. Spicy or mild, you’re going to go wild for this pasta supper.
Shopping List
1 pound of angel hair pasta
Extra Virgin Olive Oil (EVOO0
Salt and Pepper
1 onion, chopped
1 red bell pepper, chopped
1 pound cooked and deveined frozen shrimp, thawed per package directions
1/2 tablespoon red pepper flakes (for spicy, use less for mild)
1/2 tablespoon red pepper flakes (for spicy, use less for mild)
1 cup chicken stock
2 cups fresh spinach (I use the bagged spinach from the salad section)
Drop your pasta in a pot of boiling water and cook to al dente (about 5 minutes).
Meanwhile, in a big skillet over medium-high heat, saute your chopped onion and bell pepper in a drizzle of EVOO with a pinch of salt and pepper. Saute about 5 minutes.
Next, add in your shrimp and red pepper flakes and cook about a minute. Pour in your chicken stock and de-glaze the pan (scrape the little bits off the bottom). Reduce heat to low.
Drain your pasta and add hot pasta to your skillet. Stir to incorporate the pasta with the other ingredients. Stir in fresh spinach and let it wilt down about a minute.
Done!
So fast, right? The angel hair pasta cooks up in minutes, the shrimp is already cooked, so all you’re doing there is heating it through…fast, simple and flavorful. Fabulous!

This looks like something my hubby would LOVE but I am allergic to shell fish so the poor guy only gets to eat it when we go out and even then we have to be really careful about it. boo!! but it sounds like a great recipe!! 😉

What brand of frozen shimp do you buy? I have tried frozen shimp before and I was disappointed with the taste of the shrimp.
