On the 8th Day of Christmas, I decided to combine two of my favorite bundt cakes into one! Red Velvet is just chocolate, right? And what pairs better than chocolate and peppermint? Nothing! So, I merged the two together and created these little cakes!
I used my mini-bundt cake pans but you don’t have to! You can make this recipe in these pans too:
Cupcakes: Bake 15 to 16 minutes (yields 2 dozen)
Sheet Cake: Bake 30 to 35 minutes
Bundt Cake: Bake 40 to 45 minutes
I get so many emails asking me what kind of bundt pan I use…and here it is. I use Williams-Sonoma’s Nordic Ware Anniversary Bundt Cake Pan. I have had it for 10 years now and literally have made hundreds (that’s right, hundreds) of bundt cakes in it. And I wash it in the dishwasher every.single.time. And it’s still perfect. You would look at mine and think it was brand new…and it’s a decade old!
This little recipe of mine today is simple, moist and totally tastes like Christmas! I think you should make it on Christmas Eve for the ones you love.
Shopping List
1 box of red velvet cake mix
2 small boxes of instant vanilla pudding
1/2 cup of veggie oil
1 1/4 cups of water
4 eggs
1 (8 oz) package cream cheese, softened
4 cups powdered sugar
3-4 splashes milk
1 teaspoon peppermint extract
Crushed Candy Cane pieces to garnish
Preheat oven to 350 degrees
Grease (I use Pam) a 10 inch bundt pan or 2 (6 count each) mini bundt pans.
In mixing bowl, combine cake mix, puddings, oil, water and eggs with electric mixer. Pour into prepared bundt pan.
Bake 40-45 minutes (for a big bundt pan or 18 to 20 minutes for mini cakes) or until toothpick inserted comes out clean.
Let cake rest on counter in pan 10 minutes. Then, invert cake onto serving plate to finish cooling.
To make the frosting, beat cream cheese with powdered sugar and milk until creamy. Beat in peppermint extract. Add more milk if your frosting is too thick and more powdered sugar if it’s too thin. Spread on cooled cakes and top with crushed candy cane pieces.
Want to make it even easier? Just buy a can of cream cheese frosting and stir your extract into that! Voila! Frosting is done!

Hi Shay – I made these yesterday as cupcakes and they were AWESOME! One question…Did I need to refrigerate the leftover cupcakes because of the cream cheese in the frosting. I didn't think of that and now I'm wondering whether or not I have to throw them all out… 🙁

You should have refrigerated them because cream cheese was used…that being said, they're still fine! Just pop them in the fridge now.
