These are Pizza Boats.
The very first time I visited Andrew’s parents’ house, his mom made Pizza Boats. Apparently, this was one of those family staples that are made for quick bites, lunches or little appetizers. Mini pizzas served on English Muffins. Pretty fabulous, right? Over the years, this little recipe has become a part of our family too. So simple and quick…and often perfect for a little supper.

Shopping List
4 English Muffins, split in half
1 pound of ground beef (or ground turkey)
1 (8 oz) can tomato paste
2 tablespoons Italian seasoning
1/4 cup olives, finely chopped (optional)
a handful of sliced pepperoni (I used turkey)
2 cups Mozzarella cheese, shredded
a handful of Parmesan cheese, grated (optional)
Preheat the oven to 350 degrees.
Place your English Muffins on a foil lined baking sheet (for easy clean up). If you’re using 4 English Muffins, you will have 8 halves spread out on your baking sheet. Set aside.
In a large skillet over medium-high heat brown your ground beef. Once it’s browned and crumbly, stir in your tomato paste and Italian seasoning (and chopped olives if you like). Reduce heat to low.
Place a few slices of pepperoni on each English Muffin, then spoon a little of your ground beef mixture across the tops. Sprinkle a little Mozzarella down over the tops and finish off with a bit of Parm too.
Place your baking sheet in your oven and bake up about 10 minutes or until the cheese is nice and bubbly and melted.
Remove and serve immediately.
I kind of think this is the perfect supper to enjoy while watching the Olympics. Bake you up a few Pizza Boats and watch the US take gold. Perfect evening.
