You know I love my EASY WEEKNIGHT FAJITAS and make them often, but the other night, I made them even E-A-S-I-E-R and instead of the grill…
…I just pulled out my big NON STICK GRIDDLE and whipped ’em up right inside my house.
EASY FAJITAS + TORTILLAS + STORE BOUGHT FRESH PICO + MY EASY GUACAMOLE
Simple as that!
If you’re looking for an easy way to get a yummy dinner on the table, here you go. If you don’t have one of these awesome grill pans, any big pan or skillet should do the trick.

Even Easier Weeknight Chicken Fajitas
Description
My Even Easier Weeknight Chicken Fajitas are made inside and not out on the grill. I just pull out my big NON STICK GRIDDLE, but if you don’t have one, any big skillet will do.
EASY FAJITAS + TORTILLAS + STORE BOUGHT FRESH PICO + MY EASY GUACAMOLE Simple as that!
Ingredients
- Extra Virgin Olive Oil (EVOO)
- about 2 pounds of boneless, skinless chicken breasts chopped into bite-sized pieces
- salt and pepper
- 1 yellow onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- flour or corn tortillas (your choice, use gluten-free to keep this meal gf!)
- Easy Guacamole
- any toppings you like (pico, cheese, sour cream, etc)
Instructions
- Place your big skillet over medium-high heat and add in a big drizzle of EVOO.
- Next, add in all of your chicken, your onion and your bell peppers along with a generous pinch of both salt and pepper.
- Toss and stir everything until the chicken is cooked all the way through (when the chicken is pierced with a knife, the juices will run clear) and the veggies are nice and browned. This typically takes about 15-ish minutes or so. Stir often.
- Make sure you have your guacamole prepared and then, it’s about time to assemble!
- Once the chicken is cooked and your veggies are nice and tender, add in another pinch of both salt and pepper and remove from heat.
- Assemble your fajitas! Tortilla, chicken and veggies, guacamole, and toppings!
Notes
Use gluten-free tortillas to keep this meal gf-friendly. If you don’t want to make our Easy Guacamole, you can always buy store bought too!

We love to make them this way at our home. And to make it even easier, we have a little Hispanic grocery store that sells the seasoned chicken with bell peppers and onions. So easy and delicious!

These look delicious!! Also, LOVE this non-stick griddle pan!! I bought it awhile back when you had a post about it and it’s the BEST!! I hosted a Mother’s Day brunch and use this to cook my pancakes then served in it as well to keep them nice and hot!
