Oh. My. Gosh.
These bars are out of this world.
I made a s’mores bars but used Easter Marshmallow Peeps inside and let me tell you, they are just so good!! If you don’t make anything else this Easter season, make these. In fact, go ahead and pick up a few extra packages of Peeps…because after Easter, you’re still going to wan to make these.
Shopping List
1 box of yellow cake mix
1/2 cup vegetable oil
2 eggs
16 to 20 Marshmallow Peeps (any color, just not flavored)
1/2 cup of butter, softened
3 cups powdered sugar
1 tablespoon or so of milk
2 tablespoons unsweetened cocoa powder
Preheat oven to 350 degrees.
Grease (I use Pam) a 9×13 baking dish. Set aside.
In a large mixing bowl combine cake mix, vegetable oil and eggs with an electric mixer. Pour batter into prepared baking dish and bake 10 minutes. Remove from oven and quickly place the Peeps in 3 rows across the pan (see pic below). Return to oven and bake another 4 minutes.
Remove from oven and slightly press Peeps down just a little with the back of a spatula. Allow to cool completely on the counter before frosting.
To make the frosting, beat the butter, powdered sugar, milk and cocoa powder with an electric mixer. Add more powdered sugar if the frosting is too thin and more milk if it’s too thick. Once it reaches the desired consistency, frost the cooled bars. Store in the fridge when not enjoying.
When you pull the bars out of the oven, the Peeps will still be a little tall. I gently took the back of a spatula and lightly pressed them down just a bit (pictured above). Allow to cool completely before frosting.
