This time of year, I’m always trying to come up with recipes that are perfect for patio dining and swim parties. I love pies like this because you make them in advance, pop them in the fridge and then slice and serve when you’re ready to eat. Plus, when strawberries are in season…this pie is just extra fabulous. So simple, so seasonal, so strawberry. Enjoy!
Shopping List
1 (5 oz) box of instant vanilla pudding (do not prepare!)
4 ounces of cream cheese, softened (half a package)
1 (14 oz) can of sweetened condensed milk
2.5 cups chopped strawberries (plus a few for garnish)
1 pie crust, baked and ready to be filled
Whipped Cream for garnish
In a large mixing bowl, beat your unprepared vanilla pudding mix, cream cheese, and sweetened condensed milk with an electric mixer until just combined. Stir in your chopped strawberries. Pour pie filling into your prepared pie crust and refrigerate at least four hours up to 24 hours. When you’re ready to serve, slice into wedges, garnish with a little whipped cream and an additional strawberry.

This does not come out looking like your picture. Did you make the pudding first? You said just add it to your cream cheese and sweetened condensed milk but it doesn't pour. Made it for a family dinner just now and it looks bad. I am wondering what I did wrong?

The pudding is not prepared! You just add the box of instant pudding mix and cream it together with the milk and creamed cheese!

I just made two of these and followed Shay's recipe without preparing the pudding and it poured nicely. I had to make one with fat free sweetened condensed milk and that milk was much thicker than the regular fat milk and did need 2T cold water to get the same consistency as the other. Jeanie, it had me wondering if you used fat free?
