We are mushroom people at our house. Mushrooms just make a meal for the Shulls.
One night a few weeks ago, I decided to make a quick stove top soup with a mushroom base…and then I added sausage…and it was realllllly good!
Quick, hearty, flavorful, cozy…soup.

This recipe serves four.
Shopping List
1 pound ground Italian sausage (or remove the casings from about 4 sausage links)
1 onion, chopped
2 cloves of garlic, chopped
2 cups of chopped mushrooms (we used Cremini Mushrooms)
1 (10 oz) can of cream of mushroom soup
2 cups beef or chicken stock
chopped sage to garnish
Extra Virgin Olive Oil (EVOO)
salt and pepper
salt and pepper
In a large pot over medium-high heat, brown up your sausage in a drizzle of EVOO. Once browned and crumbly, add in your chopped onion, garlic and mushrooms. DO NOT SALT AND PEPPER YET. Saute everything until the mushrooms are browned up and onions tender. Next, stir in your cream of mushroom soup and stock. Reduce heat to low and simmer everything together about 10 minutes. At this time, add in salt and pepper (if you add it in too early, your mushrooms won’t brown).
When you’re ready to serve, ladle soup into bowls and garnish with chopped sage.
I mean…this is just a bowl of yummy right here! Make tonight a mushroom night!
