I just love, love, love making these little cobblers.
I’ll pass on a cookie, cake or bar any day to have a big bowl of this stuff…especially on a cold night.
In honor of the holiday season, I used a gingerbread cake mix along with my favorite combination of cherries and berries to make this one extra festive. If you can’t find a gingerbread cake mix (which is typically readily available during the holiday season), you can substitute with one box of spice cake mix and then add to it a tablespoon of ginger.
Seriously…give me cozy socks, good TV and a bowl of Ginger Cherry Berry Cobbler and I’m one happy girl!
Enjoy!
This recipe serves 6 to 8 adults. You do not make the cake mix. You sprinkle it on the cobbler dry straight from the package.
Shopping List
1 (10 oz) package of frozen mixed berries (do not thaw)
1 (21 oz) can of cherry pie filling
1 gingerbread cake mix
1 stick butter, melted
Ice cream, optional
Preheat oven to 350 degrees.
Grease (I used Pam) a 9×13 baking dish.
Spread your frozen berries across the bottom of your baking dish. Next, spoon your pie filling on top of the frozen berries and then sprinkle over the box of dry cake mix. Finally, drizzle the melted butter over everything.
Bake uncovered 55-60 minutes.
Remove from oven and serve immediately (with a little ice cream if you so desire).
I promise…you’ll make it once and then make it over and over again.
Enjoy!

I'm planning to make this for one of our Christmas Day desserts! I went searching for gingerbread cake mix today and didn't find any among all the cake mixes but off to the side, closer to cookie mixes, was a Betty Crocker gingerbread cake & cookie mix in 14.5 oz not usual 15.25 size. Is this what you use? Thank you in advance….I'm so excited to try a new recipe & have loved all your other cobblers like this!
