Queso Bites Recipe, Queso Bites

Um, so these were a huge hit!  I took queso and made them into little bites.  And they were gone in seconds!

This recipe makes about 3 dozen bites.

Shopping List
1 pound of breakfast sausage
Extra Virgin Olive Oil (EVOO)
1 (16 oz) package of Velveeta cheese (you only need half of it)
1 (10 oz) can of Rotel
3 (12-count each) boxes of mini fillo shells (found in the freezer department)

Preheat oven to 350 degrees.

Line a baking sheet with foil and spray with Pam for easy clean up.  Set aside.

In a large skillet over medium-high, brown up your sausage in a drizzle of EVOO until it’s browned and crumbly.

Next, reduce heat to medium-low and stir in about half of the Velveeta (you need about 8 oz) and your Rotel.   Stir everything together until the cheese is melted.   Then take each one of your mini fillo shells and add about a tablespoon of filling to each one.  Place each shell on your prepared baking sheet.  Once all of your shells are filled, pop your baking sheet in the oven and bake about 10 minutes.

Remove from oven and serve immediately.

These are the perfect little party snack, and I promise you, they will be gone in MINUTES!

    I just can’t bring myself to eat Velveeta, LOL, but I will totally buy a jar of pre-made queso and add the sausage and make these! What a fantastic idea…we are midwest girls, but my friends and I ALL love Mexican food! <3

      These are not, but nowadays, you can find almost anything g-free! Look for them in the freezer department.
