I love it when I don’t have recipes for you…but just ideas. I don’t know about you…but on busy school nights, I need as many dinner “ideas” as possible. Easy, dependable, family-friendly, gets on the table fast ideas. And this is one of them. Pulled pork is one of our staple recipes that I make over and over again. In fact, in my new book, Simmers, I’ve dedicated an entire chapter to recipes that start with Andrea’s Pulled Pork. This recipe is not in the book (you need go HERE to order your copy today!), but an easy idea that your family will be making on repeat all year long. You make the pork, you have the taco fixings and dinner is done. Easy as that!
This recipe makes eight tacos to serve four people.
Shopping List
about a pound of Andrea’s Pulled Pork
8 flour (or corn) tortillas
1 red onion, chopped
shredded Pepper Jack cheese, to garnish
All you do is start your morning off by putting Andrea’s Pulled Pork recipe in your slow cooker. Then, later that night, you come home, your pork is finished, you shred it, add the BBQ sauce to it (it’s all HERE in the recipe) and assemble your tacos: tortilla, pulled pork, chopped red onion and shredded cheese. We ate a big Caesar salad with ours and dinner was done. Just like that.
You can also make a big batch of Andrea’s Pulled Pork one day and use the leftovers for this meal later in the week. How easy is that idea?!?!

Yum! I used this pulled pork recipe last week for tacos and topped them with a creamy lime and cilantro coleslaw, cheese, and a couple jalapeños. SO SO GOOD!!
