Cheesy Egg & Bacon Bites are going to rock your breakfast routine.
I whipped up these delicious little bites for my Sunday school class and they were gone in minutes. What’s not to love? Little cups of scrambled eggs, smoked Gouda and crumbly bacon…um, delish! If you want, you can make these the day before and just pop them in the oven when you’re ready to bake, so they’re easy to prepare too. Win, win. This weekend, you have to make these. I promise, you’ll love them!! (And PS: you can use sharp cheddar instead of smoked Gouda too!)
This recipe makes about 3 dozen bites.
Shopping List
1 dozen eggs
½ cup sour cream
salt and pepper
1 pound of bacon, cooked to crisp and crumbled
2 cups of shredded smoked Gouda cheese
3 (12-count each) boxes of mini Fillo shells (found in the freezer department)
Preheat oven to 350 degrees.
In a large mixing bowl, scramble your eggs with a whisk. Once scrambled, whisk in your sour cream and a big pinch of both salt and pepper. Next, scramble your eggs in a large skillet over medium-high heat. Once your eggs are scrambled, stir in your crumbled bacon and shredded smoked Gouda. Stir everything together until the cheese is nice and melted. Remove from heat and then take each one of your mini fillo shells and add about a tablespoon of filling to each one. Place each shell on a baking sheet. Once all of your shells are filled, pop your baking sheet in the oven and bake about 10 minutes.
Remove from oven and serve immediately.
That’s it! Just little bites of cheesy eggs and bacon. Who wouldn’t want that for breakfast?!

These look great! I’ll definitely try these on a morning my boys have a track meet. Speaking of my boys, I made your Lemon Gnocchi last night. I added leftover turkey from Easter to it.
