We make ours with gluten-free rolled oats and flour (we love Namaste), but if you’re not a g-free fam, they feel free to make your way too.
They’re not super sweet, just a whole lot of delicious.
We always use homemade jam when making ours which is really easy to do! You can find my tips for making jam HERE. Out of all the jams I make, raspberry is definitely my favorite, but you can, of course, swap it for any other jam you love too.

G-Free Raspberry Oatmeal Bars
- Yield: 12 bars 1x
Description
These bars are perfect for dessert or even breakfast too! They’re not super sweet, just a whole lot of delicious.
Ingredients
- 1½ cups all purpose flour (we use Namaste g-free flour)
- 1 stick of butter, melted, plus 4 tablespoons more
- 3 tablespoons sugar
- 1 teaspoon baking soda
- 1 egg
- 2½ cups rolled oats, not quick cooking, divided (we use Bob Red Mill’s g-free oats)
- 1½ cups raspberry jam (or whatever jam you love)
- 1 cup of brown sugar
Instructions
- Preheat your oven to 350 degrees.
- Grease a 9×12 baking dish. Set aside.
- In a large mixing bowl, beat together with an electric mixer your flour, 1 stick of melted butter, sugar, baking soda, and egg. Stir in 1 cup of rolled oats.
- Take this batter and press it into your prepared baking dish as the “crust”. This batter is thick. I just take a spatula and press it across.
- Next, spoon your jam over the “crust” layer (if it doesn’t spread evenly, that’s okay because it will melt while baking).
- In a separate smaller bowl, stir together your remaining oats, melted butter and brown sugar. Sprinkle this mixture across the top of your bars.
- Pop your bars in the oven and bake about 25 minutes or until the edges are lightly browned. Remove from oven and allow to cool 5 minutes before slicing into bars and serving.

Happy Friday, Shay! I would LOVE to see a post about HOW you create your recipes! I know you’ve said you work a few weeks out before the next “season” of food, but I’m just so curious how it works! Do you try the recipe multiple ways? Are there recipes that you try to make work and they just don’t? Do you make them up off the top of your head, or are most inspired by something else? I love to cook so am just so interested in how the process works on your end!

The texture might be a little different as the quick cooking should be a bit more soft when baking. I haven’t used quick cooking when making these bars, but if you do and you have great results, please share!
