Oh friends, this isn’t even a recipe…this is just an idea.
Yesterday, I shared my June Book Review and well, in Nancy Thayer’s latest book, Family Reunion, the main character is always making delicious and easy little recipes during the summertime, and one of them she shared was just a simple fruit crumble with ice cream. So, I read the chapter and then that night, I made the recipe. It was A HIT! My kids thought it was so good and I never would have even made them dessert if I hadn’t have read the idea from her novel. So, I’m sharing it with you in case you need to make someone special dessert tonight too.
About 18 months ago, our family went gluten-free, and it’s honestly sucked a lot of the joy out of dessert in our house. Today, I would say we rarely have any sweet treats after dinner because no one is super interested in making/having ones that are gluten-free. I always have to remind myself that the simplest things are usually the best…and often, also gluten-free.
This one you could totally mix and match a million different ways. I hope you make it tonight too! xo

Easy Fruit Crumble
Description
This isn’t even a recipe…just a simple summertime dessert idea. Enjoy! xo
Ingredients
- whatever fruit you have on hand (we used sliced peaches, strawberries and blueberries)
- a scoop of your favorite ice cream (we used vanilla bean)
- crumbled cookies for the top (we used g-free pecan sandies cookies…so good!)
Instructions
- Slice your fruit, add your ice cream, sprinkle on your cookie crumbs, serve and enjoy! It’s as easy as that!

I know it’s not exactly the same, but 6 years ago my husband was diagnosed with type 1 autoimmune diabetes and I had to overhaul much about the way I cooked-especially with dessert. We’d always eaten healthy, but this was next level and it took me a while to find my footing. I just wanted to say I know it’s hard and you’re doing great xo

I have gluten-free friends. One of my go-tos is Pamela’s gluten-free cake mixes (I don’t bake gluten free enough to buy or make my own baking mix) – there is chocolate and vanilla (and recipes on line to make pound cakes, etc.). I have to tell you that I have used these mixes, told NO ONE except the gluten-free people and NO ONE (meaning the non-gluten freers) could tell. I made a chocolate cake (9×13) for a birthday party, topped with ice cream (you also freeze it). All the party goers were FIGHTING OVER IT. Also, Krustz makes a great gluten-free brownie mix. The first time I made it (for the gluten-free peeps at work) all the regular people ate it! The next time I made it, I put it behind my desk so the gluten-free people could enjoy it. In addition, you should try this: Chocolate Truffle Pie with a Jojo crust. Make a gluten-free chocolate cookie crust using Trader’s gluten-free chocolate Jo-Jos (you bake it). Melt a 12 oz bag of semi-sweet chocolate chips, dump in the blender, along with a can of lite coconut milk. Fire that puppy (the blender up). Pour into the crust. Chill for at least four hours in the refrig. YUMMY! (If you don’t want to melt the chocolate and use the coconut milk, you can sub 2 boxes of instant chocolate pudding with 3 cups of whole milk or 2% milk).

Great idea! I will be trying this for the fourth! Also, King Arthur’s GF fudge brownie mix is excellent, cannot tell it’s gf and can make it df if you use oil instead of butter;).
