Over July 4th, I made a Reel which showed us enjoying a delicious dinner at home with our Besties and well…it included a snippet of me pulling this yummy Bacon & Sausage Potato Casserole out of the oven, and since then, I’ve had so many of you ask for the recipe!
Whether you make this as a side or as a breakfast casserole, just make it. It’s doubly delicious thanks to both breakfast sausage and crumbled bacon. Bonus, it’s g-free too!
Mmmmm…is there anything better than cheesy potatoes? I don’t think there is 🙂 .

Bacon & Sausage Potato Casserole

Description
Whether you make this as a side or as a breakfast casserole, just make it. It’s doubly delicious thanks to both breakfast sausage and crumbled bacon. Bonus, it’s g-free too!
Ingredients
- 1 (32 oz) bag frozen diced hash browns (keep frozen)
- 1 pound of cooked and crumbled bacon
- 1 pound of breakfast sausage (we use Owens), browned
- 1 (8 oz) container of sour cream
- Optional: for a kick, add in two cups of your favorite chunky salsa
- 2 cups of a Mexican-blend cheese (one that has a cheddar, pepper jack, etc in it)
Instructions
- Preheat your oven to 375 degrees.
- Grease (I use Pam) an 8×12 baking dish. Set aside.
- In a large bowl, mix your frozen hash browns with one pound of crumbled cooked bacon, crumbled and cooked sausage, sour cream, (salsa if you desire!) and cheese. Toss everything together and then spread it in your prepared baking dish.
- Pop this in your oven and bake about 50 minutes (or until potatoes are browned and cheese is bubbly).
- Remove from oven and enjoy!
Notes
I have made this recipe now both with and without the salsa. Depending on your mood, make it whichever way as they’re both delish!
