I have been sharing our BUTTERSCOTCH MAPLE NO BAKE COOKIES with you guys for years! They are always popular at my house, and always a first day of school tradition.
Yesterday, while I was making a batch to enjoy after school, I thought I’d take some updated photos for you and make the recipe printable. After all, this is the perfect recipe for you to make at your house too!
Bonus, these cookies can easily be made g-free.

Butterscotch Maple No Bake Cookies

Description
We have been making my Butterscotch Maple No Bake Cookies for years. They are always our go-to cookie on the first day of school too! We pick up the kids, come home and enjoy these yummy bites while going over their fun first day. The best part? They’re so easy, and you don’t have to wait for them to bake! These cookies are very simple to make gluten-free too!
Ingredients
- 3 cups oatmeal (we use quick cooking, g-free)

2 cups sugar

1 stick butter

½ cup milk

1 cup peanut butter

2 tablespoons maple syrup

1 cup butterscotch chips

Wax paper for cooling
Instructions
- Pour your oatmeal into a large mixing bowl, set aside.

In a heavy saucepan over medium-high heat, bring sugar, butter and milk to a boil. Boil about a minute, then stir in peanut butter and syrup. Remove from heat and pour over your oatmeal. Fold in your butterscotch chips.

Drop by the tablespoon full on to wax paper to finish cooling (and they’ll harden up).

Once cooled, store in an airtight container when not enjoying.
