You guys, when was the last time you made a quiche for dinner? Growing up, my mom had a different variety of quiche on our table every week for dinner. I get it though…she was a busy working mom looking for easy and delicious meals she could whip up quickly (even ahead!) for her family of four.
This last football season, while we were running in and out from game to game, I had this BACON AND BROCCOLI QUICHE in my fridge many evenings ready to pop in the oven when we returned home. It is so simple, so filling and perfect with just a side salad. Plus, this recipe is easy to make gluten-free (just swap out the crust!) and versatile. You can mix and match the protein, cheese and veggies with whatever you have on hand.

We love making a quiche! It is so simple, so filling and perfect with just a side salad. Plus, this recipe is easy to make gluten-free (just swap out the crust!) and versatile. You can mix and match the protein, cheese and veggies with whatever you have on hand. Whether you’re looking for a simple supper or delicious brunch, this recipe is for you.
Ingredients
- one pound of bacon, cooked until crispy and chopped into pieces
- 4 eggs, lightly beaten
- ½ cup of milk
- ½ cup of half and half
- 1 (10 oz) package of frozen broccoli pieces, defrosted
- 1½ cups of shredded cheddar cheese
- ½ cup grated Parmesan cheese
- salt and pepper
- 1 uncooked pie crust fitted to a pie plate (we use gluten-free from Trader Joe’s)
Instructions
- Preheat oven to 400 degrees. Make sure you have your bacon cooked to crispy, chopped and reserved.
- In a large mixing bowl, whisk together your eggs, milk and half and half. Stir in your defrosted frozen broccoli and cheeses along with a big pinch of both salt and pepper. Stir in your crispy bacon pieces.
- Pour this mixture own into your pie plate fitted with an uncooked pie crust. (I place my pie plate on a cookie sheet to make it easier to slide in and out of the oven.)
- Next, slide your quiche in the oven and bake 35 to 40 minutes or until a toothpick inserted in the middle comes out pretty clean and the center is set. Remove from oven and allow to cool about 5 minutes before slicing and serving.
Notes
If you would like to make this in advance, prepare as directed but pop in the fridge before baking. When you are ready to enjoy, put your quiche in a pre-heated oven to bake.
