It’s another edition of MY PLATE!
This is where I share random iPhone pics of what’s literally on “my plate”.
This is in regular rotation at my house especially on those nights when we can’t all sit down and eat together at one time.
It’s my BBQ STUFFED SWEET POTATOES where the slow cooker does all the work (and then the air fryer helps out with two easy sides).

Okay, if you time it right, this is super super simple.
Step One: I put my chicken breasts in my slow cooker with a little BBQ sauce, set it to low and leave it alone for about 8 hours.
Step Two: Later in the afternoon, I’ll stick our sweet potatoes in the air fryer, set it to about 400 degrees for about an hour. When they’re done in the air fryer, they’re “ready to go” even if we’re not ready to eat. Of course, you could prep them and have them pop out when it’s time to eat, but if I know we’re eating at random times, I’ll pop them in the fridge so that individually my family can grab them and reheat them when it’s their time to have dinner (which only takes about 45 seconds since they’re already cooked).
Step Three: When my chicken is done poaching up in the slow cooker, I take off the lid, drain the excess liquid from the slow cooker, add more BBQ sauce and shred it right inside using two forks. I return the lid and let it hang out in my slow cooker on “warm” so that people can grab it when they’re ready to eat.
Step Four: Sides! You can do a variety, but on this particular night, we sautéed an onion to garnish our potatoes (easy!), and then I added frozen broccoli to the air fryer with just a drizzle of olive oil, salt and pepper for about 15 minutes and sliced up some avocados.
Grab your potato (heat if necessary), add in your BBQ chicken (top with sautéed onions if you want!), and add some air fried broccoli and avocado.

I love using a sweet potato as a base for barbecue chicken! We add a few french fried onions to the top of ours. YUM!

We had a very similar meal this past Monday; we used russet potatoes and pulled pork this time but I have definitely made them with shredded BBQ chicken before too. We used to have a take out place near us that served these (huge potatoes though!) and had all sorts of yummy toppings to add like sour cream, shredded cheese, chives, bacon bits, etc.

I buy sweet potatoes by the box! In the fall we get them from a local farmer and when those are gone I buy boxes at the grocery store. I do get some strange looks when walking around with an entire box in my cart.
My husband eats a sweet potato every morning. He is gluten and dairy free so his breakfast looks a little different. This would be a great way to liven up an otherwise boring tater.

I actually like to use two crock pots on nights like that. (I have a larger and a smaller one). I put my chicken in one and the potatoes in another. I am a teacher so this makes it so it is all ready when we get home!

I seriously love these posts!! Do you use a specific BBQ sauce? I love the taste of Sweet Baby Ray’s, but it’s full of yucky stuff like HFCS. I’m curious if you’ve found a healthier brand you love.

I still use Sweet Baby Ray’s. It’s gluten-free and my kids love it, so for now, that’s what works best for us.
