If you’re looking for an easy, flavorful, delicious muffin to make this fall, I have one here for you today! My FALL SPICE MUFFINS are so simple and perfect with a cup of coffee on a chilly autumn morning. They’re also easily made gluten-free too.

If you’re looking for an easy, flavorful, delicious muffin to make this fall, I have one here for you today! My FALL SPICE MUFFINS are so simple and perfect with a cup of coffee on a chilly autumn morning. They’re also easily made gluten-free too.
Ingredients
- 4 cups of pancake mix (we used Krusteaz g-free pancake mix)
- 3 eggs
- 1/3 cup sugar
- 1 cup milk
- ½ cup veggie oil
- 1 cup of golden raisins
- 1 cup of chopped walnuts
- ½ cup of grated Granny Smith Apple
- 1 tablespoon ground cinnamon
Instructions
- Pre-heat your oven to 350 degrees.
- Line your muffin pans with liners or lightly spray with Pam. Set aside.
- In a mixing bowl, stir together your dry pancake mix (unprepared), eggs, sugar, milk, and vegetable oil with a spoon. Stir in your golden raisins, chopped walnuts, grated apple and cinnamon.
- Divide your batter between your prepared muffin tins and pop in the oven.
- Our muffins baked about 20 minutes (or until lightly golden on the top and a toothpick inserted in the middle comes out clean). Allow to cool on the counter five minutes before removing and enjoying.
Notes
Swap out your pancake mix and these are easily made gluten-free!

Whew! No time to make these muffins from scratch. But I do have a boxed spice cake mix that I will use to make some fall spice muffins later today–hopefully. Just made and got in the oven baking M&M Spicy Sausage Biscuit Breakfast Casserole and Sausage and Potato Casserole. Next to make and go in the oven is the Fall Leaves Sausage Migas Breakfast Casserole and the Easy Maple French Toast Casserole. Have made these several times before and left in fridge for a few days, but this time I am going to try to freeze them when they are cooled for the cool fall Saturday mornings. Yes, I have tried many of the breakfast casserole, but these are the Four FAVORITES that are on rotation during the fall season. Got a feeling the Maple French Toast Casserole won’t make it to the freezer. It is rare for it to last more than a day in the fridge.
