Well you know I love me a breakfast casserole! They’re easy to assemble, great to make ahead of time, they freeze well, feed a crowd, and are super versatile.
Whether you make this one on a normal day or make it the day after Thanksgiving with all of those leftovers, just make it.
I baked this the other day right when Kensington had just walked in from school and she was literally hanging on me as I photographed it so that she could have a bite. Ha! It smelled that delicious. Later that afternoon, Smith and Ashby both had a piece for their after school snack too. This was a big hit for the Shull kiddos.

Description
This recipe would be excellent for those Thanksgiving leftovers! It’s easy enough to make the rest of the year too.
Ingredients
- 1 loaf of challah or brioche, torn
- 1 pound of bacon, cooked until crispy and chopped
- about 2 cups of chopped turkey breast
- 8 eggs
- 1 cup of milk
- 1 cup of cranberry sauce (from the can or fresh, whatever you have)
- 1½ cups shredded pepper jack cheese
Instructions
- Preheat your oven to 350 degrees.
- Lightly grease a 9×12 baking dish and then spread your torn bread all over the bottom.
- Sprinkle your cooked and crispy bacon pieces and your chopped turkey all over the bread in your baking dish. Set aside.
- In a mixing bowl, lightly whisk your eggs and then whisk in the milk, cranberry sauce, and shredded cheese. Pour this mixture over your bread, bacon and turkey.
- At this time, you can either cover and pop in the fridge until you’re ready to bake or you can put it directly in your pre-heated oven.
- Bake about 45 minutes or until lightly browned and the center seems set (not wobbly).
- Remove from oven, cut into squares and serve.

I am going to amend this recipe for my vegan family. I will use the Challah cranberries, eggs and maybe add some shopped walnuts. I plan to serve with maple. syrup & powdered sugar. Always looking for good egg dishes that don’t rely on cheese or meet. I think this one will do.
On the holiday health tips I. plan to drink more water, more sleep would be nice but I really don’t sleep a lot anymore a product of aging you’re up more at night, and I’ll walk more. Love the idea of just saying ,”NO!!” to anything that really doesn’t make you happy or serve your family well. Thanks for all the tips. Love your blog.
