As soon as I told my hubby that I would be making approximately 1,052 versions of a Whoopie Pie, he said, “please make chocolate chip”. So here they are. For Andrew :).
When it came down to writing out the recipe, I was stumped on what type of frosting to use…vanilla or chocolate. I said vanilla, Andrew said chocolate…we couldn’t decide, so we compromised…I made both. It’s the best chocolate chip cookie icing sandwich you’ll ever eat.
I wanted to prove that they are so simple to make…so, I thought I’d demonstrate for you :). You start with a yellow cake mix.
Then you add 2 eggs.
1/2 a cup of veggie oil
1/4 cup of water
1/2 cup of chocolate chips
Spoon, bake, ice, eat…simple, huh?
Shopping List
1 box yellow cake mix
1/2 cup veggie oil
2 eggs
1/4 cup water
1/2 cup chocolate chips
store bought vanilla or chocolate (or both) frosting
Preheat oven to 350 degrees
Combine cake mix, oil, eggs, and water in bowl. Add in chocolate chips.
Drop by 2 tablespoons onto lined cookie sheet (leave about an inch between each cookie)
Bake 8-9 minutes
Cool on pan 5 minutes, move to wire rack and cool 15 more minutes
Take one cookie and place a tablespoon or so of store bought vanilla (or chocolate) icing in the center. Press another cookie on top (this will spread the icing out to the edge).
This recipe makes about a dozen finished whoopie pies.

I LOVE recipes with cake mixes (I have that cookbook)…and can't wait to try these! have you seen the commercial for the new Cool Whip frosting in the freezer section?! that might be perfect for these…light and airy so the cake part shines. Oh geez, it's 8:30 in the morning and I want a whoopie pie.

Some yellow cake mixes call for 3 eggs, some for 2 eggs. Do you use 2 eggs regardless of what the box says?

Am I going crazy? I went back and read this several times and it only says 2 eggs in the post. Maybe I'm losing it??? It's two eggs.
