I love this method. I truly, truly do. This is one of those recipes where you can buy the stuff way in advance and just keep it in your fridge for last minute meals. This takes absolutely no time to make…can be changed a million ways to suit your family’s tastes…and is always a crowd pleaser. Plus, this makes for a great appetizer as well. You’ll be loving me after making these. Now, if your family doesn’t love spinach, leave it out. If you would rather make this with browned sausage…go for it! If instead of any meat, you would rather throw in a ton of chopped veggies…be my guest! Just use the method and make you some calzones.
1 can refrigerated pizza dough (or any pizza dough that you just love and have on hand…but Pillsbury sure makes a great refrigerated one)
1 box frozen spinach, thawed and drained
3 cloves garlic chopped
1 jar pizza sauce
Turkey Pepperoni (or whatever meat you like)
1 cup Mozzarella or Italian blend cheese
a little bit of Extra Virgin Olive Oil (EVOO)
Preheat oven to 425 degrees.
Line a baking sheet with foil and spray with Pam (this will make clean up a cinch!).
In a small skillet, heat a drizzle of EVOO over medium heat. Add in thawed spinach and stir around 2-3 minutes. Add in garlic and cook another minute. Remove from heat. (You’re just getting the spinach warm and infused with the garlic.)
Open can of pizza dough and spread into a rectangle. Cut into four squares. On one half of each square, put 2 tablespoons of pizza sauce, layer with 5-6 pepperoni, about 2 tablespoons or so of your spinach mixture, and a few tablespoons of cheese. Take the other half and fold on top. Press the sides down to seal all of your filling in. Take a knife and cut 2 little slits across the top of each calzone. Then take a tiny drizzle of EVOO (like 1 teaspoon) and brush across the top of each. Bake 9-10 minutes or until dough is nice and golden brown.
So simple, right? And so versatile! You can add in anything you want. This is a super quick, very yummy, and wholesome dinner for you and your family. Enjoy!
