In case you needed a new spin on pizza, I’ve got one for you. We are pizza eaters at my house, and I’m so glad because it’s always a sure fire way to get my kids to eat their veggies. This pizza was a super big hit! They were eating spinach and chicken sausage without blinking an eye :). My daughter kept saying she loved the “hot dog pizza”. Here you go…
Shopping List
Pizza crust (any kind you like, click here for my whole wheat dough recipe)
1 jar pizza sauce
3 cloves garlic, chopped
1 cup Mozzarella cheese, shredded
1 cup Italian blend cheese, shredded
2 cups spinach leaves (we buy the bagged spinach over by the bagged salads)
1 cup pepperoni (optional…we like turkey pepperoni along with the sausage)
1 cup basil leaves, torn into big pieces (not finely chopped)
1 pound sausage (we used chicken sausage), cut into rounds and already cooked (see below!)
Preheat oven to 450 degrees.
Roll out your crust onto your preferred pizza pan (I always use a cookie sheet). Top pizza with ingredients in order given above. Cook on bottom rack of your oven 15-20 minutes or until bubbly and golden.
Slice and serve!
Ok…about the sausage…we like the chicken sausage from behind the butcher’s counter. However, you can use any kind of sausage you like (turkey, pork, etc.). I slice my sausage into rounds and cook them in a skillet with a splash of Extra Virgin Olive Oil for about 10 minutes before putting them on my pizza. This gets the sausage nice and brown and cooked through.
