This recipe is adapted from a Gooseberry Patch recipe and it’s great because, in our house, Andrew will eat anything with peanut butter and I’ll eat anything with chocolate…this is a marriage made in Heaven. So in honor of today, March 13, 2012…my 8 year wedding anniversary, I give you muffin made in Heaven.
Shopping List
2 cups all purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup bananas, mashed
1/3 cup milk
1/3 cup creamy peanut butter
3 tablespoon veggie oil
1 egg
1 cup chocolate chips
Preheat oven to 350 degrees.
Line a 12 cup muffin tin with cupcake liners.
Combine flour, sugar, baking powder and salt in mixing bowl. Add in bananas, milk, peanut butter, oil and egg. Stir until dry ingredients are moistened. Fold in chocolate chips. Spoon batter into muffin tin. Bake 25-30 minutes or until toothpick inserted in the middle comes out dry.

I just finished making these…they couldn't be easier or quicker- love 'em! I varied the recipe a little bit. My sister gave up chocolate for lent, and my boyfriend doesn't love chocolate on things he plans to eat for breakfast (absurd, I know), so I sprinkled mini chocolate chips on only a few of the muffins. I also sprinkled walnuts on some of the other muffins. And I left some plain, without chocolate chips or walnuts, just banana and peanut butter. All variations came out excellent! Everyone took some home with them to enjoy throughout the week for breakfast, and to think of me of course ;o) Thanks for the recipe!

In the oven and looking good. I assume that the recipe is only supposed to make 12 muffins so I filled them pretty full- hopefully they turn out as good as yours looks!
