Maybe it’s because I watch a lot of Disney movies…or maybe because some of my favorite people are firefighters…what ever the reason, when I saw this recipe for Dalmatian cupcakes, I just had to make them. My favorite little cupcake book had this recipe and after I noticed the cute title, I noticed that there was a cream cheese center. Sold. I can’t resist a cream cheese center.
Shopping List
1 box chocolate cake mix
1/2 cup veggie oil
1 1/4 cups water
4 eggs
2 (3 oz) packages cream cheese, softened
1/3 cup sugar
2 cups miniature chocolate chips, divided
1 can store bought vanilla frosting
Preheat oven to 350 degrees.
Line 2 (12 cup) cupcake pans with liners. In a mixing bowl, combine cake mix, oil, water and 3 eggs with electric mixer. Divide batter among cupcake tins (about 2/3 full). In a separate bowl, beat cream cheese, remaining egg and sugar with electric mixer. Stir in one cup of chocolate chips. Place a spoonful of cream cheese mixture on top of each cupcake.
Bake 20-22 minutes or until toothpick inserted in the center comes out clean.
Frost cooled cupcakes with vanilla frosting and top with remaining chocolate chips.
So fun to eat and yummy too! The cream cheese filling bakes right into the batter and is a great little surprise when you bite in. Put on 101 Dalmatians, grab a cupcake (or two) and settle in for family movie night.
