The other night, hubs asked if we could have a grilled chicken Caesar for dinner. I love a Caesar salad but it kind of sounded a little boring for my supper. Then I thought, why not put a grilled chicken Caesar between a piece of good quality crusty bread and have sandwiches. I’m so smart. Really, I’m like a genius :). This was my kind of dinner…easy, simple, filling and light. Below is how to make the salad from scratch but of course you could just buy a bagged Caesar salad from the produce department. Make it simple on yourself!
Shopping List.
1 package pre-marinated chicken fajita meat (in the meat case department)
1 bag Romain lettuce
1 bottle good quality Caesar salad dressing
Parmesan cheese, grated
1 box Caesar croutons
Crusty bread from the bakery
Turn your outdoor grill (or inside skillet) to medium-high heat, grill chicken on both sides until cooked through (about 7 minutes per side). Remove from heat and slice.
In a large mixing bowl, combine lettuce, Caesar dressing, cheese and croutons. Take your crusty bread and layer your salad on top. Top with fajita chicken.
Done!
