Baseball season is in full swing. I love me some baseball!! The best thing to eat while watching a game (at home or in a ball park) is without a doubt a killer hot dog. This is just a reminder that some of the best week night meals, are the simplest.
good quality hot dog buns
Turkey Smoked Sausage (I like the Oscar Meyer variety), cut into four pieces
1 large onion, chopped
Ketchup, Relish, Mustard to garnish
Alexia Sweet Potato Fries (in the freezer department of your grocery store)
Extra Virgin Olive Oil (EVOO)
In a large skillet over medium-high heat, saute onion in 2 tablespoons of EVOO until caramelized (about 10 minutes). In a separate skillet or outdoor grill, cook turkey links over medium-high heat until warm and browned (about 7 minutes or so).
Place each sausage link in a bun, top with onions and garnish with desired condiments. Serve with sweet potato fries (and maybe a green salad…oddly enough, it pairs really well with hot dogs.)
Dinner doesn’t always have to be complicated, right? Now, go turn on the TV and cheer for the Red Sox :).
