Win a $100 Gift Card to Target

Hello!  Hello!  Spring is in the air which means summer is just around the corner.  What better way to kick off summer than a gift certificate to Target for all of your summer gear.  All you have to do to win is leave me a comment with your favorite summer dinner suggestion and the winner will receive a $50 gift card.  However, if your name is drawn and you are also one of my followers, you’ll receive a $100 gift card instead.  Simple, right?  Just make sure you leave me your contact info (email, google account…).  Contest ends at 12:00 a.m. Monday morning, so you have all weekend to let me know what you like to eat on a warm summer night.  The winner will be announced Monday morning (after a random drawing).  Best of luck!

    My favorite summer meal is chicken fajitas or pretty much anything else you can do on the grill that doesn't require heating up the oven.

    My favorite summer dinner…besides ANYTHING on the grill…is Grilled Ginger Peach Chicken…mmmm….I might have to make that next week 🙂

    My favorite summer dinner is a salad bar, normally we grill some chicken to put on it then we set out all kinds of veggies and fruits and everyone adds as much as they want of what ever they want. and if I happen to win my email is! Love the blog and the ideas I get from it

    My favorite summertime meal is Shells Caprice. Which has shell pasta, summer tomatos , garlic, basil, EVOO, mozzarella cheese and S & in it. Super easy to make!!

    Summer cornbread salad! We've already made it twice and it's not summer yet. Think crumbed cornbread, turkey bacon, tomato, corn, beans, bell pepper, green onions, cheese, ranch…all tossed together in a big bowl. Let me just say we NEVER have leftovers 🙂

    I love to have the hubby grill a pork tenderloin and I pair it with fresh summer strawberry and avocado salsa! It goes great with cilantro lime rice! Yum!!

    Steak salad. Perfect for summer because you can bbq and then cut it up and toss it one salad with potatoes. Just right for enjoying an evening outside!

    I love shrimp prawns marinated in coconut milk with red chillies, ginger, sweet chili sauce and fresh basil, grilled and served over asian soba noodles topped with the remaining sauce cooked on the stovetop.

    Hmmm….my favorite summer recipe is Low Country Broil eaten outside at the lake or beach (sausage, potatoes, shrimp and corn cooked together in a big 'ole pot!) Perfect for large crowds!

    My favorite summer meal is whole wheat penne pasta tossed with cherry tomatoes cut in half, fresh mozzerella cubed, and fresh basil. Drizzled with EVOO and fresh ground pepper and a little salt. Served with a fresh green salad and sun tea.

    Definitely grilled fish with a fresh corn salad. My husband usually does the grilling. And I make a simple corn salad with black beans, bell peppers, jalapenos, tomatoes, onions, cilantro, EVOO, and S&P. Yum! Sometimes we make a Sandia Agua, and fresh fruit salad.

    I live in the desert. So I try to keep cooking in the summer, to a minimum. But I still like to eat healthy.

    My favorite meal, is to make chicken salad, with lots of veggies. Then take a large tomato, and clean out the inside. Like you would do a bell pepper, when you make stuffed bell peppers. Then I put some baby spinach on the bottom, and fill with the chicken salad. It's delicious. Especially on those triple digit days!

    Definitely grilled fish, turned into fish tacos. With homemade guacamole and pico de gallo. I also make a black bean and corn salad. It's really yummy!

    This might sound crazy, but I pull out the slow cooker. I make BBQ chicken in there. Then we have shreaded BBQ chicken sandwiches. And a cucumber and tomato salad! My kids love it. And I enjoy not having to cook on the stove. 🙂

    We enjoy a fajita salad. Either we make steak or chicken fajitas on the grill. And add them to a salad with fresh corn, diced tomato, avocado, olives, and jalapeno EVOO. Topped with some crunchy corn tortilla strips.

    My favorite summer meal besides all the normal yummy grilled favorites (burgers and hot dogs) is soft tacos with cool mango salsa to top them with! And for dessert, homemade banana pudding! 🙂

    I just love when my husband grills kabobs for us. He makes some with shrimp, steak, or chicken. Then plenty with fresh veggies. And a few, with fruit. Those are the best when they are grilled! 🙂

    I hope this doesn't sound too weird. I like poached eggs on a spinach salad. With some Italian cheese. Super easy. But so tasty!
