You know how I just adore a lazy lasagna! It’s the perfect week-night meal. This one is even more perfect because it’s in the slow cooker! During the busy holiday season, I love having something yummy on the table for my family…but between the shopping, wrapping, baking, and endless partying…I don’t have a lot of spare time. This dinner will be waiting on you when you get home. Tis the season for a simple supper.
Shopping List
1 1/2 pounds boneless, skinless chicken breasts (frozen or thawed)
1 jar of spaghetti sauce
1 can tomato soup, undiluted
1 cup of chicken stock (or water)
1 box of frozen spinach, thawed and all of the excess water drained out
1 (7 or 8 oz) jar of pesto
1 cup Mozzarella cheese (plus a little more for garnishing)
1 pound lasagna noodles, broken into pieces or 1 pound of penne pasta
In your slow cooker, layer your chicken, spaghetti sauce, soup and stock. Cook on low about 6 hours or on high 3 hours. About 30 minutes before you’re ready to eat, remove the lid and shred the chicken using two forks right in the slow cooker. Add in spinach, pesto, cheese and noodles. Stir, cover and cook the last 30 minutes on high.
Serve with an additional dollop of pesto and sprinkle of cheese.
That’s it! Now you have plenty of time to watch my favorite Christmas movie, The Holiday. Can we say Jude Law?!

1. Sounds like a great dinner! I haven't tried cooking pasta in my slow cooker yet, but I'm determined to try it soon!

I have a hard time believing that the pasta will cook in half an hour in the slow cooker. Are the noodles supposed to be cooked before they go in for the last half hour or can you put them in uncooked?

Just break the noodles into pieces and they'll cook up fast! Put them in uncooked!
