A few weeks ago, I received an email from a new reader, Melissa Carswell. In it…she had enclosed her twist on a Rice Krispies Treat. Well, let’s just say the heavens opened up and there was a light shining down on my computer screen when I read it. Oh my goodness! Melissa is now officially my new best friend.
Not only were these incredibly simple but they were so unbelievably delicious too! Kensington and I couldn’t shove them in our mouths fast enough! And talk about a recipe you can Mix and Match…this method is going to be used over and over again at my house.

Shopping List
3 tablespoons butter
5 cups marshmallows
1 cup creamy peanut butter
5 cups Rice Krispies cereal
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
In a microwavable bowl, melt your butter (about 30 seconds or so). Once melted, add in your marshmallows and coat with melted butter. Microwave another minute and a half or so until marshmallows are melted. Remove from microwave and immediately add in peanut butter. Stir until incorporated, and then pour over cereal. Mix well and then spread in a greased 8×8 baking dish. (Spray a spatula with Pam and press it over the top to get the cereal to stay put in the baking dish.)
Now, take your one cup of chocolate chips and one cup of butterscotch chips and melt them together in a small bowl (stirring every 30 seconds). Once they’re melted, spread the chocolate mixture on top of the bars as the “frosting”.
Let the bars cool in the baking dish about 20 minutes before slicing into them.
You will never have another unfrosted Rice Krispies Treat again…they.are.fabulous!

Hi, For a just as good way to make these without dealing with marshmallows, use 1 cup sugar, 1 cup light Karo, melt til bubbly, add 1cup PB then 6 cups cereal. Then top with choc/butterscotch. That is classic Scotcheroos. Love your blog!
