Bundt Cake #98: Lemon Cookie Crunch

Bundt Cake #98.  Wow.  That’s pretty awesome!

I decided my bundt cake collection needed one more lemon cake…but this time, with a Golden Oreo frosting on top.  Andrew doesn’t care for lemon…and never really eats any sugar…but oh man, he had a HUGE piece of this cake!  Delightful!

Shopping List

1 box of lemon cake mix
2 small boxes of instant lemon pudding (use vanilla if you can’t find lemon)
1/2 cup of veggie oil
1 1/4 cups water
4 eggs
1 can vanilla frosting
1 package of Golden Oreos
1 tablespoon of lemon zest
Preheat oven to 350 degrees
Grease (I use Pam) a 10 inch bundt pan.
In mixing bowl, combine cake mix, puddings, oil, water and eggs with an electric mixer.   Pour into prepared bundt pan.
Bake 40-45 minutes or until toothpick inserted comes out clean.
Let cake rest on counter in pan 10 minutes. Then, invert cake onto serving plate to finish cooling.
 While the cake is cooling, empty your can of vanilla frosting into a mixing bowl.  Crush about 10 Golden Oreos and add to your frosting.  (I put my Oreos in a large Ziploc bag and crushed them with a rolling pin.)  Stir in lemon zest too.  Then, crush about 6 more Oreos and keep to the side for garnish.
Frost your cake with your Golden Oreo frosting and garnish with remaining crushed Oreos.
The vanilla frosting with just a hint of lemon from your zest and all of those Golden Oreos…delicious!

    YUM! Gonna have to try this one! I used your recipe for the 4th of July red, white and blue bundt cake and it turned out super yummy and festive!

    I have made your chocolate chip pins cake several times and we love it!!! The last two times all of the chips have fallen to the bottom. Any tips???

    First off, I've made so many of your recipes since I found your blog a couple months ago, it is ridiculous! I made this bundt cake and wanted to let you know, they now make lemon Oreos. So I used those instead of the golden ones and it was ah-mazing!! I made two other bundt cakes of yours, and you have helped me redeem myself from a former horrible baker! Thanks!
