I’ve said it a hundred times…my Spinach Pesto Baked Tacos are a staple around our house. They are just so easy and so yummy, that we tend to eat them a lot. The other day, Andrew asked me if I could make a BBQ Chicken version…um, hello? I am the Mix and Match Mama for a reason…
Shopping List
1 pound cooked and shredded chicken breast (click here to see how I get my chicken)
1 1/2 cups of your favorite BBQ sauce
10 to 12 green onions, chopped
10 to 12 green onions, chopped
2 cups Monterey Jack cheese, shredded
5 taco shells (I used the “stand and stuff” ones…but regular will work)
Preheat oven to 425 degrees.
In a large bowl, combine your cooked and shredded chicken with BBQ sauce and green onions. Set aside.
Take an 8×8 inch baking dish sprayed with cooking spray and line your 5 taco shells up. Divide the chicken mixture between all 5 shells. Top tacos with cheese and pop dish in the oven. Bake about 10 minutes or until the cheese is bubbly and brown.

Do your kids eat these? My kids would probably eat them in a soft shell but they aren't too good with crunchy ones! They are 4 & 3 :0)

Great minds think alike…almost! Chicken tacos are on our menu for tonight as well, but I'm doing mine in the crockpot {of course I saw it on Pinterest}. I'm going to try your version next time! Thanks for sharing!

Hi Shay! The first time I made these, my hubby wasn't a huge fan of the bbq sauce with the taco shell – so the next time I "mix and matched" it and put the chicken/onions/bbq sauce mixture on top of a store bought pizza crust and made bbq chicken pizza – it was divine! 🙂
