Last month, I made some Easy Ice Cream Sandwiches that were such a hit, I’ve already decided to mix and match them. This time, I took apple pie as my inspiration and whipped up these simple little treats for your family. You will love how simple and yummy they are!
You can make as many or as few of these as you like..the ratio is 1 cup of ice cream to 1/2 a cup of pie filling.
Shopping List
Oatmeal or Snickerdoodle Cookies (I bought them from my grocery store bakery but you could make your own)
Vanilla Ice Cream
Canned Apple Pie Filling
2 teaspoons of cinnamon for every cup of ice cream
In a mixing bowl, combine your ice cream with your pie filing and cinnamon. Set the bowl back in the freezer at least one hour to harden up a bit.
Remove ice cream from freezer and top one cookie with a heaping amount of filling and then place another cookie on top.
Done!
Simple, right? This is the perfect little dessert for a busy night. They look kind of fancy but there is little work involved. It’s a fancy fake-out!
