On Wednesday morning, I got to make breakfast with my friends on Good Morning Texas. It was such a fun experience! On the menu, easy breakfast items moms can make for their busy kiddos in the morning. These sausage and egg cups are perfect for that! You can make a big batch in advance and freeze them. Then in the morning, your kids can heat them in the microwave for 30 seconds and a hot, high-protein breakfast is ready to go!
Simple and family-friendly!
This recipe makes 12 breakfast cups.
Shopping List
1/2 pound sausage (like Owens breakfast sausage), browned and crumbled
1 cup frozen chopped broccoli, thawed
1/2 cup cheddar cheese, shredded
12 eggs
Preheat oven to 350 degrees.
Line a 12 cup muffin tin with cupcake liners.
In a large bowl, combine the browned sausage, broccoli and cheese. Fill each muffin cup 2/3 full of your sausage mixture.
In a bowl with a spout, beat your 12 eggs. Pour your eggs on top of each muffin cup being careful not to over-fill.
Bake 25 minutes.
Remove from oven and cool about 5 minutes before removing from muffin tin.
There! It’s that simple!
And of course, you can mix and match this a million different ways. Instead of broccoli, you can add spinach, chopped bell peppers, sliced green onion or mushrooms. You could use chicken sausage instead of pork sausage, mozzarella cheese instead of cheddar…the possibilities are endless!
If you’re going to freeze your breakfast cups, then make sure they come to room temp before placing them in a large freezer bag.

You were so great on TV! They were all awesome recipes to share! These really are such a good idea for a protein-packed breakfast. I'm so glad I saw you use the muffin liners. I've made a similar version before and didn't use them and the clean-up was not fun! I normally put a tbsp of salsa in mine, but I love the idea of the broccoli for a nice change!
