During the fall, I love incorporating a little apple into my food. Apple makes these meatballs a little bit sweet and a whole lot of moist! I used a chicken sausage as my meat base but you could always use a turkey sausage too. Just remove the sausage from the casings and you’re ready to go. Can’t find chicken or turkey sausage? Then just use a pound of ground turkey breast and add in a dash of fennel seeds, salt and pepper…the result will be delicious!
Shopping List
1 pound chicken sausage (uncooked)
1/2 cup grated apple (I use a cheese grater)
1/2 cup red onion, chopped
2 eggs
1 cup Panko or bread crumbs
1 cup ketchup
1/3 cup apple juice
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 teaspoon mustard
2 tablespoons cider vinegar
Preheat oven to 400 degrees.
In a mixing bowl, combine your sausage, apple, onion, eggs and Panko. Form mixture into 12 meatballs and place them on a foil lined baking sheet.
While your meatballs are cooking, make your sauce.
In a small bowl, combine your ketchup, apple juice, Worcestershire sauce, brown sugar, mustard and cider vinegar with a whisk. Set aside.
After your meatballs have cooked 20 minutes, open the oven door and drizzle your sauce down over the tops of each one. Continue to bake the meatballs another 5 to 8 minutes.
Then you’re done!
I love serving mine with sweet potato fries or baked potatoes. The onion and apple really do compliment each other well and pair beautifully with the chicken.
