I always get nervous posting recipes with coconut in them. Some of you are jumping with joy and some of you are totally disgusted. Coconut is such a polarizing topic! I love coconut and according to a lot of comments and emails, most of you do too. For those of you that don’t…I apologize :).
German Chocolate is such a common recipe that I decided to change it up a bit and make German White Chocolate instead…same bells and whistles but with white chocolate instead of milk chocolate. I think you’re going to love this twist on a classic…
Shopping List
1 box of white cake mix
2 small boxes of instant white chocolate pudding (substitute vanilla if you can’t find white chocolate)
1/2 cup of veggie oil
1 1/4 cups water
4 eggs
3 cups sweetened flaked coconut, divided
1 cup white chocolate chips
1 can store bought Vanilla Frosting
1/2 cup chopped pecans
Preheat oven to 350 degrees
Line 2 (12 count each) muffin tins with cupcake liners.
In mixing bowl, combine cake mix, puddings, oil, water and eggs with electric mixer. Stir in 1 1/2 cups coconut and white chocolate chips. Fill each cupcake liner until it’s 2/3 full of batter and bake 16 to 18 minutes or until toothpick inserted comes out clean.
Let cupcakes rest on counter in pan 10 minutes. Then remove cupcakes to wire rack to finish cooling.
To make the frosting, stir one can of vanilla frosting with 1 cup of coconut and your chopped pecans. Spread on cooled cupcake and then garnish with remaining 1/2 cup of coconut.
These are like little snowballs…perfect for Christmas.
And don’t worry…tomorrow’s recipe, doesn’t have coconut in it :).

Notice how my cupcake has TWO liners. I bake it in one liner and then after they're baked, I stick it inside a second liner for presentation :).
