I just whipped this little dinner up one night out of nowhere…and it was delicious! They were out of brisket at my grocery store, so I bought lean stew meat instead…I threw it in the slow cooker along with some veggies and Rotel then scooped out this goodness over yummy cornbread. Simple. Hearty. Done.
Shopping List
1 pound of stew meat (or you could use a brisket)
1 tablespoon chili powder
1 onion, chopped
1 green bell pepper, chopped
1 can of Rotel tomatoes
1 cup of salsa
1 cup of water
Cornbread, prepared
Shredded Cheese, Sour Cream, Chopped Green Onions, Guacamole to garnish (optional)
In a skillet over medium-high heat, brown your beef in a little Extra Virgin Olive Oil a few minutes on each side (just to get some color on there). Sprinkle your chili powder on the beef along with some salt and pepper.
In your slow cooker, layer in your chopped onion, green pepper and your beef (if you’re using a brisket, just put it in there whole, you’ll shred it at the end). Pour your Rotel, salsa and water down over the top. Cover and cook on low 7 to 8 hours or on high 3 to 4 hours.
When you’re ready to serve, remove lid and…if you’re using a brisket, shred it right there inside your slow cooker using two forks, scoop out a helping of your yummy beef mixture right on top of a piece of cornbread. Garnish with your favorite toppings.
That’s it! The slow cooker does all of the work for you! My grocery store sells delicious ready to eat cornbread but if yours does not, just whip up a box of Jiffy and you’re done. Happy eating!

Hi Shay! I have a question totally unrelated to today's post, but it applies to some of your recipes! Last night I made your Bisquick Chicken Parm (for the 2nd time – yum!), but, how do you turn the chicken over w/o everything sticking to the foil? I used Pam on my foil, but I lost almost all of the first side when I flipped the chicken over. Please tell me your secret!!! Thank you 🙂

Hmmm…you either didn't use enough Pam on your foil or you flipped too soon when your chicken wasn't ready and still gooey on the bottom. Next time, try waiting a few minutes longer before you flip!

I make almost the same recipe but I add a can of pinto or black beans so it stretches a little bit father. Made it with brisket for years but a few months back used stew meat b/c it was on-sale and everyone liked it better.

I'm making traditional stew tonight but this recipe is one I'll try next time I buy stew meat! Look delish! The kids and I are coming down there in March for Spring break and then we'll be back Easter weekend! Oh my goodness, I would love to come see your house, thank you for the invite. I'll let you know when we are there and we can set it up. I think Easter is April 18th or so, you may or may not be fully unpacked. I'll also be back in June.
Our house plans are FINISHED!! It only took forever to get them perfect but I'm ok with that. They are being made into a set of construction plans now and then we will finally break ground in March/April once the ground is good and thawed. It just depends on how late our winter goes. I'm excited for you, April 1st will be here so soon!

I made this last night (without the pepper and onion) and served it over cheese enchiladas! Delish!! My picky husband loved it because it tasted very similiar to the dish he always orders at our favorite Mexican place. The downer? He says now we don't need to eat there anymore, LOL.
