I’m always looking for a little dessert to make just for two people. Some nights, you just want to stay home with your sweetie and indulge without baking an entire cake or pan of brownies. This little recipe is simple to whip up on any weeknight…but I kind of think it’s particularly perfect for Valentine’s Day. Just a couple of sweetie pies.
I made mine with Nutella and Strawberry Pie Filling but you can totally mix and match this up. Here are some other ways you could make your pies…
Fudge Sauce and Cherry Pie Filling

Sprinkle in chopped pecans, walnuts, dried cranberries, coconut, chocolate chips, butterscotch chips…
Here’s how you assemble them…
Unroll your defrosted pie crusts (or you can make one from scratch). I used 2 sheets of pie crust to make 4 pies…you could just use one sheet and then only have 2 pies. You need a bottom piece and a topper piece for each pie.
Use a cookie cutter or in my case, a bowl, to get 4 pieces of dough.
Lay your bottom pieces out on a baking sheet (I lined mine with parchment paper for easy clean up!). And again, I’m making 4 pies, so I have 4 bottom pieces (pictured above) and 4 topper pieces.
Spread a little Nutella across the middles of each one.
Next, add a dollop of your pie filling.
Then take your topper pieces and top the bottom pieces. I pinched the edges down so that everything stayed inside the pie. Sprinkle the tops of the pies with a little sugar.
Bake at 350 degrees for about 10 minutes.
