Oh my goodness, these were insanely good! At first, I wouldn’t tell my friends that I had used Irish Cream Coffee Creamer in them (because I didn’t want to give them any reasons not to like them) but then after they were devoured, I revealed my secret.
This is so simple! You take a box of brownie mix, jazz it up with Irish Creamer, top it with cream cheese frosting and voila! The best brownie you’ll ever eat. Yes. I just claimed that :).
I used International Delight’s Irish Cream creamer for this recipe but any Irish Cream flavored coffee creamer will work just fine.
Shopping List
1 box of your favorite brownie mix
1 cup or so of Irish Creamer (the kind you pour in coffee), divided
2 eggs
1/2 cup vegetable oil
1 cup chocolate chips
1 (8 oz) package of cream cheese, softened
3 cups powdered sugar
Preheat oven to 350 degrees.
Grease (I use Pam) a 9×13 baking dish. Set aside.
In a large mixing bowl, combine brownie mix, 1/4 cup Irish Creamer, eggs, and vegetable oil with an electric mixer. Once smooth, stir in chocolate chips.
Pour batter into prepared pan and bake 18 to 20 minutes or until a toothpick inserted in the middle comes out pretty clean. (Don’t over-bake…nothing is worse than a dry brownie!)
Allow the bars to completely cool before frosting them.
To make the frosting, beat with an electric mixer your cream cheese with the powdered sugar and a splash of Irish Creamer. Add more creamer if the frosting is too thick and more sugar if it’s too thin.
Frost cooled bars with your frosting and refrigerate at least an hour before slicing and serving.
I’m telling you…it’s going to be hard for you to go back to boring old plain brownies after you have one of these.

Do u have the creamer measurements as a typo. U have 1 cup but only have us using 1/4 cup and some splashes. Thanks. Yummy.

Totally feel free to leave off the frosting! They will still be super yummy!
And no, that wasn't a typo about the amount of creamer. I like to ere on the side of caution when suggesting people buy something specific like a creamer. You never know if you need a splash more!
