So…my kids asked me to make Jelly Bean Bars…and I just couldn’t resist.
Festive. Yummy. Simple. Easter.
Shopping List
1 box of white cake mix
1/2 cup vegetable oil
1/4 cup water
2 eggs
1/2 cup butter, softened
3 cups powdered sugar
1-2 splashes of milk
1 teaspoon almond extract
2 cups Jelly Beans
Preheat oven to 350 degrees.
Grease (I use Pam) a 9×13 baking dish. Set aside.
In a mixing bowl, combine first 4 ingredients with an electric mixer. Pour batter into prepared baking dish and bake 12 to 15 minutes or until a toothpick inserted in the center comes out clean.
Allow bars to cool on the counter.
Once the bars are cool, start making your frosting. Beat your butter, powdered sugar and splash of milk with an electric mixer. If your frosting is too thin, add more sugar and if it’s too thick, add another splash of milk. Once frosting reaches the desired consistency, stir in your almond extract. Stir 1 1/2 cups jelly beans into frosting. Frost cooled bars with frosting and then sprinkle remaining 1/2 cup of jelly beans over the top.
Slice into bars and serve.
Make sure you refrigerate any leftover bars.

This looks so cute for Easter. Jelly Beans are usually gluten free so I am definitely going to try this with my gf cake mix.
