Listen ladies…when I see a recipe that looks divine, I make it. My friends the Six Sisters Stuff pinned their recipe for Lemon Oreo Cheesecake Bars and I was instantly in love.
Lemon, Oreos, Cheesecake, perfection.
The only thing I really tweaked about their original recipe was that I used Golden Oreos instead of Lemon Oreos (because Lemon Oreos aren’t in season right now).
I’ve told a few of those sisters before that I’d be more than happy to be their seventh…I just adore these girls :).
Don’t let the list of ingredients scare you…these bars were really simple to make!
Shopping List
Cake Layer
1 box of lemon cake mix
1/2 cup butter, softened
1 egg
1 tablespoon vegetable oil
1 tablespoon water
1 cup white chocolate chips
Cream Cheese Layer
2 (8 oz) packages of cream cheese
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 tablespoon lemon juice
20 Golden Oreos, crushed into pieces
Frosting Layer
1 tablespoon butter, melted
1 cup powdered sugar
1 tablespoon lemon juice
1 (3 oz) package of cream cheese (they’re right next to the 8 oz packages…buy another 8 oz if you don’t see them and only use half)
yellow food coloring, optional
Preheat oven to 350 degrees.
Grease (I use Pam) a 9×13 baking dish. Set aside
In your mixing bowl, combine your dry cake mix, softened butter, egg, oil and water with a fork. Stir in your chocolate chips. Press this mixture across the bottom of your prepared baking dish as your “crust” layer.
In a second mixing bowl, mix your 2 (8oz) cream cheese and sugar together with an electric mixer. Then, beat in your eggs, vanilla and lemon juice. Fold in your crushed Oreos with a spoon. Spread your cream cheese layer over your crust layer in your pan.
Bake for 30 to 35 minutes or until very lightly browned and mostly set in the center (it will still be a little wobbly). Remove from oven and let cool one hour on kitchen counter.
After an hour, make your frosting for the top. Combine butter and powdered sugar with an electric mixer. Beat in your lemon juice. Add more powdered sugar if the frosting is too thin and more lemon juice if it’s too thick. Once it reaches the desired consistency, beat in your 3 oz package of cream cheese and a drop or two of yellow food coloring (optional).
Spread frosting over cooled bars and refrigerate at least one hour (I refrigerated mine overnight) before slicing into bars and serving.
These babies were so incredibly delicious. I mean…seriously good. The next time you’re invited to a BBQ or pool party…make these. I promise that you’ll be the hit of the party!

Shay, are you LDS like the six sisters?? I know you are religious I just didn't know which religion you practiced? I had someone give me a Book of Mormon awhile back, but I haven't started reading it yet. You like to read, right? Do you have any thoughts on the Book of Mormon?

Hi Shay! I found this recipe over at Six Sisters and printed it off a few months ago, because I've been wanting to try it. What's holding me back is that I'm not a huge lemon fan. I figured I'd mix and match it with other flavors, but I'm not sure which ones or how best to change the lemon frosting. Any mixing and matching tips on this one from the mix and match mama?

You should make chocolate! Chocolate cake mix with regular Oreos :).

Have you tried Blue Bell Lemon Bliss ice cream? It's the ice cream version of this bar and it is amazing! I never make bars but am going to have to try this one 🙂 Thanks for the goods!
