I love eating shrimp for lunch! Shrimp is just so easy to throw into a pasta or salad and it instantly makes any dish a little more fancy.
I whipped up this simple little shrimp salad the other day for lunch and it was delicious! You can eat it as soon as you make it or refrigerate it and eat on it later that day or the next. Easy and yummy!
This recipe makes enough salad to serve 2 adults lunch but can easily be doubled to make more.
2 cups of cooked, peeled and deveined shrimp (I used the small shrimp)
2 cups spinach leaves
1 avocado, diced into pieces
a handful of cherry tomatoes
4 to 6 green onions, chopped
about 3 tablespoons of your favorite Caesar or Ranch Salad dressing
a pinch of salt and pepper
Combine all of your ingredients in a large mixing bowl. Add a little more dressing if you desire. Either refrigerate and serve later on that day or serve immediately.
Now, isn’t that just the simplest little lunch? Loved it.
