Bar #47: Pineapple

Bar #47 was really popular with my crowd!  Everyone said they loved it because it didn’t taste too pineapply (yes, I made that word up).  
Moist, yummy and and topped with cream cheese frosting…pretty darn perfect if you ask me.

Shopping List
1 box yellow cake mix
2 eggs
1/2 cup vegetable 
1 (8 oz) can crushed pineapple, drain but reserve the juice to use for the frosting
1 (8 oz) package of cream cheese, softened
3 cups powdered sugar
Preheat oven to 350 degrees.
Grease (I use Pam) a 9×13 baking dish.
Using an electric mixer, beat your yellow cake mix, eggs and vegetable oil in a mixing bowl.  Beat in your pineapple (don’t forget to reserve the juice!).
Pour batter into prepared pan and bake 20 minutes or until a toothpick inserted in the middle comes out clean.
Remove from oven and let cool completely.
To make your frosting, beat your cream cheese, powdered sugar and a splash of your reserved pineapple juice.  Add more sugar if the frosting is too thin and more juice if it’s too thick.
Frost cooled bars and refrigerate until you’re ready to slice and serve.
So simple and so yummy!

    I can't wait to try these! Pineapple is my favorite fruit! Do you think they would be good with coconut sprinkled on top? I hope you had a great weekend with your son! Love your blog so much!

    These look good. Wonder if yellow cake mix will work since I already have a box I may try it and see. Hope I don't screw up your recipe
