Dinner Tonight: Grilled Buffalo Chicken Burritos

The other day, I told Erika that I was making Buffalo Chicken Burritos for dinner and she told me I should grill them.  She’s so dang smart sometimes.
I came home, made my burritos as usual and then grilled them up on my indoor grill pan (but an outdoor grill would totally work too!).
Not only was this supper super simple, it was really good too.  Thank you so much Erika for the great idea!
(And pssssst…if grilling isn’t your thing, just bake these guys at 375 for about 18 to 20 minutes.)

This recipe makes four burritos.
Shopping List
1 pound of cooked and shredded chicken (click here for my perfect chicken recipe)
1 cup of your favorite Buffalo Sauce
2 cups shredded cabbage or slaw mix
1 cup of Feta Cheese crumbles
1/2 red onion, chopped
4 burrito sized tortillas
Ranch Dressing for drizzling and dipping

Preheat your grill or grill pan to medium-high heat.

In a large mixing bowl, toss your cooked and shredded chicken with the Buffalo Sauce (add more sauce if you like a little extra).

Lay out your four tortillas on a work surface.  Spoon a quarter of the chicken mixture down the middle of each burrito.  Next, sprinkle a quarter of your slaw mixture down over the chicken followed by the Feta and red onion.

Fold the burrito ends in first and then side to side.  Flip over and you’re ready to grill.

Grill each burrito about 6 minutes on both sides.  Remove from grill and serve with a drizzle of Ranch dressing down over the tops.

Dinner is done!

    So I'm curious, do your kids eat these or are they too spicy? Do you serve them a separate meal or modify this one?

    I just don't use as much sauce on my kids' burritos! You could substitute BBQ sauce too!

    My almost 7yr old daughter LOVE some chicken wings… we will try these soon!! Buffalo sauce and buritos is a great mix and match! p.s. I jumped in the pool yesterday and had a blast swimming around. Loved "getting my hair wet" with my sweet girl!

    This was a hit! I took all of the ingredients and threw them on top of chopped romaine. Added a little water to my ranch dressing to help coat everything nicely. Toss it! šŸ™‚
