Breakfast, brunch, dinner…whichever, eggs are always a good choice.

This recipe makes 4 large burritos because I only use half of the sausage…to make more, just use more sausage and add more eggs.
Shopping List
1 (16 oz) package of breakfast sausage (I only use half of it)
a dozen eggs or egg whites (or a combination of the two!)
2 cups Cheddar cheese, shredded
1/2 a cup of picked jalapeno peppers (omit this for less spicy burritos)
Salsa to drizzle down over each burrito
Tortillas
Salt and Pepper
In a large skillet over medium-high heat, brown half of your sausage until browned and crumbly.
Meanwhile, crack your eggs into a bowl and whisk together. Add in a pinch of salt and pepper.
Once your sausage is browned, pour your beaten eggs right into the skillet over the sausage. Reduce heat to medium-low and using a spatula, scramble the eggs and sausage together.
Once your eggs are about scrambled, stir in your cheese and jalapenos. Once everything is folded in together, remove from heat.
Pour some of your egg mixture down the center of each tortilla and then drizzle with salsa.
Breakfast (or dinner) is done!
If you’re making this for your kids, remove their eggs before stirring in the jalapeno peppers (unless your kiddos like things spicy).
