Well, I ate one of these babies for dessert and then another one for breakfast. I also shared them with my friends and Megan said it tasted like fall in a bar. I like that. Fall in a bar.
Whether you need a sweet treat for after dinner or a little something with your coffee in the morning…you’re going to love these little bars.
Apple butter is found on the jam aisle.
Shopping List
1 box spice cake mix
3/4 cup butter, melted
2 1/2 cups quick-cooking oats, uncooked
1 (12 oz) jar apple butter
2 cups powdered sugar
1 tablespoon vegetable oil
1-2 splashes milk
Preheat oven to 350 degrees.
Grease (I used Pam) a 9×13 baking dish. Set aside.
In a mixing bowl, combine cake mix, butter and oats and combine with a spoon until crumbly.
Spread half of oats mixture across the bottom of your prepared baking dish, patting it down to form a “crust” layer. Spread your apple butter over the crust mixture with a spoon (don’t worry if it doesn’t completely cover the crust, it will melt when baking and spread out). Crumble the remaining half of your oats mixture over the top of the jam and lightly press it down.
Bake about 20 minutes.
While baking, combine your powdered sugar with your vegetable oil and milk in a small bowl to create a glaze. Add more powdered sugar if your glaze is too thin and more milk if it’s too thick.
When your bars are finished baking, drizzle the glaze on top of the warm bars and finish cooling on the counter at least 20 minutes before slicing.

I didn't have any apple butter, and Target (not where I grocery shop usually, but where I went yesterday) didn't have any. I substituted 12 ounces of pumpkin.
