At our house, dinners like this are just perfection.
I love this meal because it cooks away all day in the slow cooker and then comes together in no time. My kiddos love this because they’re into tortillas, chicken, salsa and guacamole (Texas kids for sure!).
The next time you’re looking for a quick little supper to whip up on busy nights, you should make this one. You will not be disappointed!
This recipe serves 4 adults.
Shopping List
1 pound of boneless, skinless chicken breasts (not frozen)
1 green bell pepper, chopped
1 small onion, chopped
1 jalapeno, seeded and chopped
2 (4 oz) cans of chopped green chiles
1 (1 oz) package of taco seasoning or two tablespoons of chili powder
1 (16 to 24 oz) jar of salsa verde (that’s a green salsa available in many brands)
1 cup or so of chicken stock or water
8 tortillas (flour, corn or I used whole wheat)
Guacamole as a side or to garnish
Shredded Montery Jack or Cheddar Cheese to garnish
A squeeze of fresh lime juice, optional
In your slow cooker, place your chicken, chopped bell pepper, onion and jalapeno, cans of green chiles, taco seasoning, salsa and stock or water. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours.
When you’re ready to serve, remove the lid of the slow cooker and shred up the chicken right inside the slow cooker using two forks.
Top each tortilla with a little bit of the chicken mixture, some fresh guacamole a little cheese and a squeeze of lime juice.
That’s it! Supper is done (and totally delish!).
For my kiddos, I don’t want things too spicy, so I use a mild salsa verde. The jalapenos will not be as spicy after cooking all day but you could exclude those if you think it’s too hot for your family.

This looks SO yum and like the perfect weeknight dinner for a working couple. This may seem like a silly question, but do you put the chicken in raw? I've heard that you shouldn't put raw meat into a slow cooker (that it usually needs to be at least browned first) but I wasn't sure if that rule stands with chicken! Thanks!

You need to brown beef before putting it in the slow cooker because beef won't brown in a slow cooker but chicken can most definitely be put in raw! Enjoy!!

i made this tonight and it was so yummy. i took the chicken out to shred and i took out some of the liquid before i added the chicken back in. we used avacado and sour cream and it was amazing. my daughter made nachos with the chicken as well! thanks shay!

I made this tonight and it was delicious!! I took the chicken out to shred it and added some instant rice with the leftover juice and left it on high for another 10 min and it was so flavorful. I will definitely be making this again!

Made this last night! Dumb question–do you drain the liquid when you're done or kind of just dig out the chicken/peppper/onion mix when serving? Also, do you have a favorite green salsa? Was not thrilled with the one I used. Thank you for your amazing recipes. Your blog is one of the highlights of my day.

You don't need to drain anything. I just pull out the chicken with a fork. As for the salsa, I usually buy whichever is on sale. You can always substitute with a regular red salsa instead!

These are delicious!! My super picky eater not only ate them but said he "liked them a little" which is a pretty big deal! My oldest ate and ate and ate….haha….and then he ate the leftovers for lunch the next day! And I ate the chicken in a salad which was SO good! So perfect and we will definitely be having them again!

Ok found a awesome way to eat without having to drain anything!! Just cut your tortilla shells up and pour this over them then your toppings it was delicious!!

We made these last week and loved them SO MUCH! The flavor is awesome. I ate mine like a soup and my husband used a slotted spoon and ate it like tacos. Either was was fab and we were loving the leftovers as well. This is going right back on the meal plan for next week! Yum.
