Happy Monday! It’s going to get really cold here this week (maybe a little chance of snow!), so our menu is dedicated to the cold and dark nights of November. Bundle up, light a fire and stay toasty inside!
For the carnivores at my house, I created this Sausage and Broccoli Cheese Soup…just like the classic but with yummy sausage added in.
My friend Candace sent me this Angel Chicken recipe years ago and it’s the perfect slow cooker supper for cold nights.
Chipotle Beef Chili. Yum.
These Slow Cooker Cornbread Chicken Enchiladas are unbelievably good! The cornbread cooks right inside the slow cooker!
As for our bundt cake this week, I’m gearing up for Thanksgiving, so I picked one that would be delicious to serve on Turkey Day…

My daughter and I love the Angel Chicken. Instead of the Cream of Mushroom (food allgeries). I use Cream Of Chicken. This what we are having for Thanksgiving dinner since it will just be my daughter and I. The Cornbread Chicken Enchiladas sound good too. 🙂

Tonight we tried the Slow Cooker Cornbread Chicken Enchiladas and I just have to tell you they were ah-maz-ing. So unexpected, I thought it would be good, I had no idea it would be so good that my husband would ask for it to be put into a "weekly rotation"!!
