At my annual recipe exchange this year, I made these Chicken and Broccoli Bites.
I love appetizers like this because they can also be quick little lunches and light suppers too. We’re on a big broccoli kick at our house because it’s Smith’s favorite vegetable…so, I’m trying to incorporate it into as many things as I can.
These little bites are so super simple to whip up and delicious too! Enjoy!
Shopping List
1/2 a pound of cooked and shredded chicken (click here to see my perfect chicken method)
1 (10 oz) box of frozen broccoli, defrosted
1/2 a cup of shredded Swiss cheese
1/2 a cup of shredded Cheddar cheese
1 (8 oz) bottle of Ranch dressing
1 can of Crescent Rolls
Preheat oven to 350 degrees.
Spray a cookie sheet with Pam or line it with parchment paper to prevent sticking. Set aside.
In a mixing bowl, combine your cooked chicken, broccoli, cheeses and Ranch dressing.
Unroll your crescent rolls and take each triangle and spoon about two tablespoons of filling in the center. Fold the edges of the crescent roll over (like you normally would when making rolls) and place them on the cookie sheet.
Bake the Chicken and Broccoli Bites about 10 to 12 minutes or until the rolls are lightly browned and the filling warm.
Serve immediately.
Such simple little bites of cheesy broccoli and chicken goodness.

definitely trying these! any suggestions for a picky eater?? my 2.5 year old will only eat rice krispies, mac & cheese, and muffins! yipes! I feel like a terrible mom, but I want him to eat SOMETHING! thanks! 🙂

We do something similar but make it into a casserole. Broccoli, chicken, cheese, sausage, cream of chicken and mushroom soups all mixed together. Bake in the oven and then add the crescent rolls on top, bake until flaky!

Would there be any adjustments to these to account for leaving out the cheese? I wonder if leaving it out and only doing broccoli, chicken and ranch would make the filling too wet.
