I made these and took them to church on a Sunday morning…by the time I got home at noon, I already had one text and one email from girlfriends wanting the recipe.
This right here is my favorite flavor combination…chocolate and mint…they are just meant to be together.
(And psssssst…because they’re green, they’re perfect for St. Patrick’s Day!)
Shopping List
1 box chocolate cake mix
1/2 cup vegetable oil
2 eggs
1 cup mint chocolate chips
1 (8 oz) package cream cheese, softened
2 cups powdered sugar
1 splash of milk
1 teaspoon peppermint extract
2 or 3 drops green food coloring
Preheat oven to 350 degrees.
Grease (I use Pam) a 9×13 baking dish. Set aside.
In a large mixing bowl, combine cake mix, vegetable oil and eggs with an electric mixer until creamy. Stir in mint chocolate chips. Pour batter into prepared baking dish and bake about 10 minutes or until a toothpick inserted into the middle comes out mostly clean (do not over bake).
Remove from oven and cool completely before frosting.
To make the frosting, beat your cream cheese, powdered sugar and milk with an electric mixer. Add more powdered sugar if it’s too thin or more milk if it’s too thick. Once it reaches your desired consistency, beat in the peppermint extract and green food coloring.

Yes! By using the cake mix instead of brownie mix and omitting water, they'll bake up quickly in 10 minutes. Make sure you're using a 9×13 pan. Enjoy!!

Hi! These Look amazing! But I have a silly question, by 'frost cooled bars' am I supposed to put them in the freezer?

Great question! When recipes say "cooled", it just means to room temp. When it says "chilled", that comes from the fridge. Enjoy!

Help! Was planning on making these now (during nap time) but my husband used half of our cream cheese for buffalo chicken dip (yum!). So I only have 4 oz. Any thing I can substitute or should I wait and make these another day when I have a whole block? Thanks for your help!

Target and Walmart are both good at carrying items like this…but I can't make any promises. The bars will still be delish with regular semi-sweet chips!
